This hands-on workshop covers food processing and quality evaluation instruments:
• Farinograph:
Measures dough mixing behavior by recording resistance during kneading. Determines water absorption, dough development time, and dough stability, helping assess flour quality and gluten strength for bakery applications.
• Gloss Meter:
An optical device that measures surface shine by analyzing reflected light. Used to evaluate appearance and surface quality of chocolates, coatings, fruits, and packaging materials.
• Color Analyzer:
Objectively measures food color using light reflectance and expresses results in L*, a*, b* values. Ensures color uniformity and monitors quality changes during processing.
• Freeze Dryer:
Dehydrates food by sublimation under vacuum after freezing, preserving structure, flavor, and nutrients while extending product shelf life.
